Can I intergrate an external DNS Server to Enhance, that isn't part of the enhance stack?
For example via RDNS. (Plesk has a slave dns extension)

Enhance writes bind format zone files which are served by PowerDNS. Therefore if your alternate DNS server can read them, this should be possible.

We are also adding CloudFlare API integration which will enable you and your customers to use CloudFlare for DNS with all records being synchronised from the panel.

So, after reading some docs, is my understanding correct: Each Box with the DNS role will serve DNS, and it's my turn to setup the zones correctly and make the dns server availablie with the right ns names ......

If you are using Enhance for DNS then you don't need to do anything manually. Just go to settings -> platform and you can assign a name server hostname for each of your DNS role instances. These will have A records created and will be shown to your customers if Enhance detects that the DNS for their website is not correctly pointed.

The only thing you need to do is to create the corresponding glue records with the domain registrar for the domain(s) on which your nameservers are based.
