For legal reasons this can not be automatically from a hosting provider done. In some countries are laws about privacy that have to be respected. Even when you operate in another country. But you can inform your customer how to install it and what information they have to provide at the privacy information/ GDPR cookie information. One of the most heavy laws are from the EU, but another countries follow. And the most courts allow cases, when just somebody can open the website in this country.
Why is the the statistics with the real hits important for you?
When a customer complain that his website is slow at some time, you don't know if there are so many hits, that the server got busy. Or if there is a backup in the background running what slows down the page as well. Now you can look in the statistic an know what time you had the hits and you get already an idea where the issue is. If it was the amount of hits, you can check the website if the browser caching is proper done or if there are endless AJAX scripts running and you can help the customer to fix the issue or to upgrade his package.
