You need to completely re-think your infrastructure and what failure modes you plan to protect against. There is a reason why true HA hosting is so expensive. Anycast is just one method of skinning the HA cat.
The most common setup is a load balancer and 2 servers. This can be locally hosted within your network, service provider or cloudflare. One of the big things is if you want redundancy between networks, such as if one of your ISP fails.
I use dedicated servers so I can’t use simple proxying as it will add big latency.
Rubbish. A dedicated server means nothing. HA however does have a performance impact.
Keeping things as a VPS, even if hosted on a dedicated server does give you significantly more flexibility
Just remember that HA makes for some very interesting and complex types of failures. Done properly it can be worse than having just hosted it on a single reliable box.
