Does the update process auto update to the latest release and apply all commands shown in the release notes. (Like: v12-upgrade fix-backup-permissions)
Or is is better to just install a fresh v12 and migratie websites?

Yes, it’s production-ready and the upgrade process is manual. Just follow the guide exactly as provided, and you should be fine. No need to create a new cluster.
If you install fresh, that means a new license. There's currently no way to migrate sites from one Enhance cluster to another without support.
The upgrade to V12 is manual and probably always will stay manual.
Yes. We updated this morning. Only hiccups were old backup servers that were too close to being out of disk space. We simply unmounted /backups on each, added new backup servers and moved backup role to our new backup servers. Fairly painless.
