A LOT of work. Anyone can setup a mail server with perfect uptime but it requires a ton of effort to keep deliverability good. People WILL change providers when every other email ends in spam or worse just silently gets ignored by big players like gmail, not even ending in spam or with a delivery error.
When you don't have AI trained on billions of emails like a real provider, finding that outbound spam filtering & rate limiting sweetspot is basically impossible, so your delivery will ALWAYS be inferior. Inbound spam filtering will also be inferior.
